Eeral Masala/ Mutton Liver Masala
Ingredients:
- Liver - 250 gms
- Shallot onions - 15
- Curry leaves - few
- Coriander leaves - few
- Pepper - 1 tbsp
- Fennel seeds - 1 tbsp
- Cumin seeds - 1 tbsp
- Cinnamon - 1
- Cardamon - 1
- Bay leaf - 1
- Star anise - 1
- Ginger-garlic paste - 1 tbsp
- Coriander powder - 1/2 tbsp
- Sambar powder/Chilli powder - 1 tbsp
- Turmeric powder - 1 tbsp
- Salt as required.
- Always buy dark brown color liver, avoid liver with white spots.
- Cut liver into one inch cubes and wash it nicely.
- Soak liver in water for half an hour before cooking and change the water every five minutes.
- Clean liver nicely and keep it.
- Chop onions and grind pepper, fennel seeds, cumin seeds, cinnamon, cardamon, bay leaf, and star anise into paste.
- In a pan, add oil and add chopped onion along with curry leaves, saute it two minutes.
- Now add ginger-garlic paste, saute this for 2 to 3 minutes and then add ground paste.
- Add one cups of water and add liver pieces.
- Then add coriander powder, sambar powder, turmeric powder, and salt. Close it with a lid.
- Stir the masala often.
- This recipe can be prepared in 15 to 20 minutes. Finally garnish liver masala with chopped coriander leaves.
- Serve this with rice or idli.
