Poondu Kulambu 2 (without tamarind)

Ingredients:
  • Garlic - 15 to 20 flakes
  • Shallot onions - 20
  • Tomato - 2
  • Sambar powder - 1 1/2 tbsp
  • Turmeric powder - 1 tbsp
  • Asafoetida - 1 pinch
  • Salt as required.
  • Mustard seeds - 1 tbsp
  • Curry leaves
To Grind:
  • Pepper corns - 1/2 tbsp
  • Cumin seeds - 1 tbsp
  • Grated coconut - 1 or 2 tbsp
Method:
  • Remove skin from the garlic pods and boil it in 1/2 cup water for 5 minutes.
  • Cut the onions and tomatoes, keep this aside.
  • In a pan, add oil and mustard seeds, as it starts spluttering, add curry leaves, chopped onion and tomato, saute this for 2 to 3 minutes.
  • Now add sambar powder, turmeric powder, asafoetida, salt, and ground paste.
  • Saute it for 2 minutes and add 1 1/2 cups of water.
  • When it starts boiling add boiled garlic pods(along with the water used for boiling).
  • Cook this kulambu in medium flame for 10 minutes.
  • Serve it with rice.

Eeral Masala/ Mutton Liver Masala

Ingredients:
  • Liver - 250 gms
  • Shallot onions - 15
  • Curry leaves - few
  • Coriander leaves - few
  • Pepper - 1 tbsp
  • Fennel seeds - 1 tbsp
  • Cumin seeds - 1 tbsp
  • Cinnamon - 1
  • Cardamon - 1
  • Bay leaf - 1
  • Star anise - 1
  • Ginger-garlic paste - 1 tbsp
  • Coriander powder - 1/2 tbsp
  • Sambar powder/Chilli powder - 1 tbsp
  • Turmeric powder - 1 tbsp
  • Salt as required.
How to clean liver:
  • Always buy dark brown color liver, avoid liver with white spots.
  • Cut liver into one inch cubes and wash it nicely.
  • Soak liver in water for half an hour before cooking and change the water every five minutes.
Method:
  • Clean liver nicely and keep it.
  • Chop onions and grind pepper, fennel seeds, cumin seeds, cinnamon, cardamon, bay leaf, and star anise into paste.
  • In a pan, add oil and add chopped onion along with curry leaves, saute it two minutes.
  • Now add ginger-garlic paste, saute this for 2 to 3 minutes and then add ground paste.
  • Add one cups of water and add liver pieces.
  • Then add coriander powder, sambar powder, turmeric powder, and salt. Close it with a lid.
  • Stir the masala often.
  • This recipe can be prepared in 15 to 20 minutes. Finally garnish liver masala with chopped coriander leaves.
  • Serve this with rice or idli.

Prawn Fry

This is my son's favorite recipe
Ingredients:
  • Prawn - 1/2 kg
  • Sambar powder/chilli powder - 1 tbsp
  • Turmeric powder - 1 tbsp
  • Coriander powder - 1 tbsp
  • Ginger-garlic paste - 1 tbsp
  • Salt as required
  • Rice flour or rava - 4 tbsp
  • Oil for frying
Method:
  • Clean prawn nicely.
  • Mix sambar powder, turmeric powder, ginger-garlic paste, coriander powder, and salt with little water into paste.
  • Marinate prawn with the above mixture and keep it aside for an hour.
  • Nicely coat prawn with rava and fry it in hot oil.

Mutton Kulambu

Ingredients:
  • Mutton - 1/2kg
  • Shallot onion - 30
  • Tomato -2
  • Ginger-garlic paste - 1 tbsp
  • Cinnamon - 1
  • Cardamon - 1
  • Star anise - 1
  • Clove - 2
  • Sambar powder - 1 1/2 tbsp
  • Cumin seeds - 1 tbsp
  • Coriander powder - 1 tbsp
  • Fennel seeds - 1tbsp
  • Kaskas - 1 tbsp
  • Coconut milk - 1/2 cup
  • Turmeric powder - 1 tbsp
  • Bay leaf - 1
  • Salt to taste
  • Curry leaf - little
  • Coriander leaves - few
Method:
  • Wash mutton nicely and marinate it with turmeric powder . Cut onion, tomato and keep it aside.
  • Grind cinnamon, cardamon, star anise, fennel seeds, kaskas, bay leaf, and clove nicely.
  • In a pressure cooker, add chopped onion, curry leaves and ginger-garlic paste, saute it until the raw smell disappears.
  • Now add chopped tomato and saute it two minutes.
  • Add the ground paste and then add mutton pieces.
  • Saute mutton pieces nicely until water oozes from it.
  • Now add sambar powder, salt, and coriander powder.
  • Add two cups of water to the kulambu, when the water starts boiling, add coconut milk.
  • Close the cooker and let it cook on medium flame. 
  • Switch off the cooker after 6 or 7 whistles.
  • Now open the cooker, add some coriander leaves and let the kulambu boil for 2 to 3 minutes.
  • Serve this kulambu with rice.
