Pineapple Rasam
Ingredients:
- Pineapple slices - 2 cut into small pieces
- Pineapple slice - 1 (make this into puree)
- Cooked toor dal - 1/4 cup
- Chopped tomato - 1
- Peppercorns - 1 tsp
- Cumin seeds - 1 tsp
- Red chilli - 1
- Garlic pods - 3 (optional)
- Turmeric powder - 1/2 tsp
- Asafoetida - 1/2 tsp
- Mustard seeds - 1 tsp
- Curry leaves - few
- Salt as required
- Olive oil - 2 tsp
- Grind peppercorn, cumin seeds, red chilli, garlic pods, choppped tomato into coarse paste.
- In a pan, add 3 cups of water, chopped tomato, cooked dal, pineapple pieces, salt, ground paste, turmeric powder, asafoetida, bring this to a boil and let it cook for few more minutes until pineapple is cooked.
- Add pineapple puree and cook for 2 more minutes.
- Heat oil in a pan, add mustard seeds, curry leaves and add this to rasam. Finally garnish rasam with coriander leaves.
