Tofu vadai/ Paneer Vadai

Ingredients:
  • Tofu/Paneer - 200gms
  • Gram dal flour - 1 cup
  • Chopped onion - 1/2 cup
  • Chopped green chillies - 1 tsp
  • Chopped coriander leaves - 1/4 cup
  • Finely chopped ginger - 1 tsp
  • Finely chopped garlic - 1 tsp (optional)
  • Salt as required
  • Oil for frying
Method:
  • Scramble tofu (here i have used tofu), mix everything with tofu except oil. You don't require water.
  • Heat oil in a pan, take small ball from the vada dough, flatten it in your palm, fry until it turns brown.
  • Serve hot with any chutney. Kids will definitely love it.

Eggless Oatmeal Apple Cake

Ingredients:

  • Oats - 3/4 cup
  • Wheat flour - 1/4 cup
  • Salt - a pinch
  • Baking soda - 1/2 tsp
  • Apple paste - 1/2 cup (grind it in mixer)
  • Milk - 2 tsp
  • Yogurt - 1/2 cup
  • Sugar - 1/2 cup
  • Butter - 1/2 cup
  • Tutty fruity - little

Method:

  • Sieve oats, wheat, baking soda, and salt together. 
  • Beat sugar and butter together into nice paste. Add yogurt, milk, and apple paste. Mix everything nicely and then add sieved items. Beat everything.
  • Grease cake pan and pour the beaten cake mixture. Add tutty fruity on top of it. Bake it on high for 35 minutes until inserted fork comes clean.

Naan without Yeast

Ingredient:
  • Maida/All purpose flour - 2 cups
  • Yogurt - 1/2 cup
  • Warm milk - 1/2 cup
  • Baking soda - 1/4 tsp
  • Baking powder - 1/2 tsp
  • Sugar - 1/4 tsp
  • Salt as required
  • Butter - 1 tbsp
Method:
  • Seive flour, salt, baking soda, and baking powder. Take the seived flour in a large bowl and make a dent. Pour milk, yogurt. and sugar.
  • Mix well , don't knead too hard, use  your finger tips. Keep this aside for 3 hours. Knead and make balls larger than roti.
  • Roll these balls into tear shape, dust flour while rolling. Cook this naan on tawa on one sides, flip and cook the other side on direct heat.
  • Apply butter and serve hot with any gravy of your choice.

Pineapple Rasam

Ingredients:
  • Pineapple slices - 2 cut into small pieces
  • Pineapple slice - 1 (make this into puree)
  • Cooked toor dal - 1/4 cup
  • Chopped tomato - 1
  • Peppercorns - 1 tsp
  • Cumin seeds - 1 tsp
  • Red chilli - 1
  • Garlic pods - 3 (optional)
  • Turmeric powder - 1/2 tsp
  • Asafoetida - 1/2 tsp
  • Mustard seeds - 1 tsp
  • Curry leaves - few
  • Salt as required
  • Olive oil - 2 tsp
Method:
  • Grind peppercorn, cumin seeds, red chilli, garlic pods, choppped tomato into coarse paste.
  • In a pan, add 3 cups of water, chopped tomato, cooked dal, pineapple pieces, salt, ground paste, turmeric powder, asafoetida, bring this to a boil and let it cook for few more minutes until pineapple is cooked.
  • Add pineapple puree and cook for 2 more minutes.
  • Heat oil in a pan, add mustard seeds, curry leaves and add this to rasam. Finally garnish rasam with coriander leaves. 

Eggless Chocolate Cake with Chocolate Icing

Ingredients:
  • All purpose flour/Maida - 1 cup
  • Condensed milk - 200 gm
  • Plain yogurt - 100 gm
  • Milk - 1/2 cup
  • Butter - 100 gm
  • Cocoa powder - 50 gm
  • Baking soda - 1 tsp
Icing:
  • Butter - 50 gm
  • Condensed milk - 100 gm
  • Cocoa powder - 4 tbsp
Method:
  • Preheat oven to 190°C. Sieve flour, baking soda, and cocoa. Beat yogurt and butter together.
  • Add the beat ingredients to the sieved ingredients, add condensed milk and milk little-by-little, blend everything together.
  • Pour the cake mixture in the greased cake tin. Bake it for 30 minutes till inserted fork comes out clean.
  • Allow it to cool on the wire rack
Icing:

  • Mix everything under icing well and microwave it for 30 seconds. Mix it nicely and apply evenly on the cake.
  • Let the cake rest for 1 hour.
  • Your cake is ready to serve. 

Roasted Cauliflower

Ingredients:

  • Medium sized Cauliflower - 1
  • Plain yogurt - 1 cup
  • Chilli powder - 1/2 tsp
  • Coriander powder - 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Garam masala - 1/2 tsp
  • Salt as required
  • Olive oil - 2 tsp

Method:

  • Tore cauliflower into florets. Mix yogurt, chilli powder, coriander powder, turmeric powder, garam maala, and salt in a bowl. Add cauliflower into this mixture, without breaking florets, mix everything nicely. Keep this aside for half an hour.
  • Place foil on the roasting tray, arrange florets on the tray, drizzle oil over the florets, cook it on high for 20-25 minutes.
  • Serve hot.

Simple NanKhatai Recipe

There are so many versions for this recipe. This is one of the easy methods. Enjoy your evening tea with this recipe.

Ingredients:

  • All purpose flour/Maida  - 1 cup
  • Powdered sugar - 1/2 cup
  • Cardamon powder - pinch
  • Melted Butter or ghee - 1/2 cup
  • Baking soda - 1/2 tsp

Method:

  • Sieve flour and baking soda. Mix butter, sugar, and cardamon powder nicely. To this add flour little by little and knead it into smooth dough. Let it rest for an hour.
  • Pinch small balls and roll it into smooth cookie. Place it in the cookie tray and bake it in the preheated oven at 180°C for 20 minutes.

Eggless Date Cake

This is a very easy to make. If you are new to baking, you can start with this recipe.


Ingredients:
  • Seedless Dates - 18 pieces
  • All purpose flour/Maida - 1 cup
  • Sugar - 3/4 cup
  • Melted butter - 1/2 cup
  • Baking soda - 1 tsp
  • Milk - 3/4 cup
  • Chopped nuts - 1 tsp
Method:
  • Soak dates in milk for 1 hour. Grind it along with sugar into smooth paste. Now add butter to the mixture(you can even use refined oil), beat it nicely.
  • Sieve flour and baking soda. Add flour little by little to the date mixture. Mix it nicely. Finally add nuts and mix everything.
  • Preheat oven at 200°C, grease the baking pan and pour the mixture. Bake the cake for about 35 minutes. Insert a fork, if it come out clean, then your cake is ready.
