Thengai Burfi/ Coconut Burfi
Ingredients:
- Grated coconut - 2 cups
- Sugar - 1 1/2 cups
- Cashew - 20
- Ghee - 2 tsp
- Cardamon powder - little
- Water - 3/4 cup
- Roast cashew in 1 tsp ghee, keep this aside.
- Dissolve sugar in water and heat till it reaches one string consistency.
- Add coconut to sugar solutions and start cooking in low heat, it took 30 minutes for me, saute until raw coconut smell disappear. When the coconut is nicely cooked, white bubbles appear around the corner. Now add cardamon powder and cashew. Give a final stir.
- Grease a tray and pour this burfi, let it cool completely and cut it into small pieces.
- Store this in airtight container
