Cauliflower Breadsticks

Ingredients:
  • Cauliflower - 1 head
  • Egg - 1
  • Cheese - 200 gm
  • Oregano mix - 2 tsp
  • Chilli flakes - 1 tsp
  • Pepper powder - 1/2 tsp
  • Salt - pinch
Method:
  • Cut cauliflower into florets and drop it in a big bowl of hot water. Let it rest for 2 minutes and then remove it.
  • Coarse ground the florets, its better if you use food processor. Don't smash the florets completely.
  • Microwave the ground cauliflower for 10 minutes and then squeeze excess water from the cauliflower. You can do this by hanging the cauliflower in the clean kitchen towel for 5 minutes.
  • Transfer cauliflower to a large bowl and add egg, 100 gm grated cheese, oregano, chilli flakes, pepper, and salt. Mix everything nicely for 5 minutes so that everything blends well.
  • Transfer cauliflower mix to the baking sheet lined with parchment paper or aluminium foil, flatten it into rectangular shape of about 1/4 inches. 
  • Bake it for 20 to 25 minutes at 180 degree Celsius in a preheated oven. Take it out and spread the remaining cheese, bake for 5 more minutes and cut it into breadsticks.
  • Serve breadsticks with sauce. This is the delicious alternative to the regular flour breadsticks.

Baked Soya Chunks

Ingredients:
  • Soya chunks - 1 cup
  • Salt as required
  • Chilli powder - 1 tsp
  • Cumin seeds - 1/2 tsp
  • Olive oil - 3 tsp
Methods:
  • Boil 2 cups of water with salt and add soya chunks to it, reduce heat to low. Soya chunks doubles its size.
  • Remove soya chunks from water and run cold water over it for 2 minutes. Squeeze light and drain water from chunks.
  • In a wide bowl, add chilli powder, cumin seeds and olive oil, mix it nicely, add the chunks and give a nice stir so that everything is coated well.
  • Preheat oven, line a baking tray with aluminum foil or parchment paper, scatter chunks over it. Bake it high for 10 to 15 minutes.
  • This is a tasty snack and very easy to make.
  • You can even add chilli flakes, oregano mix or any other spices of your choice.

Fruit Biscuit - Karachi biscuit style

Ingredients:
  • All purpose flour - 1 cup
  • Unsalted Butter (room temperature) - 80 gm
  • Powdered sugar - 1/3 cup
  • Tutti frutti - 1/2 cup
  • Cinnamon powder - 1/2 tsp
  • Elachi powder - 1/2 tsp
  • Vanilla essence - 1 tsp
Method:
  • With electric beater, beat sugar and butter till it becomes soft and glossy.
  • Now add cinnamon powder, elachi powder and vanilla extract, beat it once.
  • Slowly, add flour to the butter mixture and blend everything well.
  • Finally fold tutti frutti to the cookie dough.
  • Don't knead the dough, just shape it like a log and wrap it with cling film.
  • Refrigerate the log-shaped cookie dough for an hour.
  • Cut the log into half inches slices. 
  • Preheat the oven at 180 degrees.
  • Arrange the cookies in the baking tray with one inch apart as the cookie expands little bit.
  • Bake it for 15 minutes, let it rest for 10 minutes after baking, store it in the airtight container.
  • This taste best with coffee, enjoy your evening.

Carrot Vichy - French Food

This is very easy to prepare and kids will definitely love it.

Ingredients:
  • Carrots (peeled and chopped) - 1 cup
  • Butter cubes of 1 cm - 10
  • Water - 1/2 cup
  • Brown sugar - 1 tsp
  • Salt - pinch
  • Lemon - 1 tsp
  • Chopped Parsley - 1/4 cup
  • Olive oil - 2 tsp
Method:
  • In a pan, heat olive oil, toss carrots for 2 minutes then add rest of the ingredients except parsley. 
  • Cover the pan and cook over low heat for about 20 - 25 minutes until water evaporates and carrot is cooked tender. 
  • Finally stir in parsley and serve hot.
  • This is quick, easy and very tasty.

Carrot Cake - Jamie Oliver style

Ingredients:
  • All purpose flour - 175 gm
  • Brown sugar or cane sugar - 175 gm
  • Sunflower oil - 170 ml
  • Grated Carrot - 175 gm
  • eggs - 2
  • Baking powder - 3.5 gm
  • Cinnamon powder - 2.5 gm
  • Tutti frutti - 30gm
  • Ginger paste - 2.5 gm
  • Baking soda - 2.5 gm
  • Vanilla essence - 2.5 ml
Method:
  • Preheat the oven to 180 degrees and grease the baking pan.
  • In a large pan, take the oil, sugar and egg, beat it nicely with electric beater. Add vanilla essence and beat once. Sift flour, baking powder, baking soda, ginger and cinnamon powder. Slowly fold flour mixture to the egg mixture. Finally add carrots and tutti frutti, fold it nicely.
  • Pour the cake mixture in the cake tin and bake it for 35 minutes. Use a tooth pick to check when it is done. The cake slightly bounces when you touch in the middle which shows it is well baked.
  • Let the cake cool, slice it and enjoy this tasty, spongy and healthy cake.

Mushroom Pakoda

Ingredients:
  • Button mushroom - 200 gm (12 pieces)
  • Big onion - 1(chop it lengthwise)
  • Gram flour - 3/4 cup
  • Asafoetida/hing - pinch
  • Garam masala - 1 tsp
  • Chilli powder - 1 tsp
  • Chopped ginger and garlic - 1 tsp
  • Chopped coriander leaves - 1/4 cup
  • Curry leaves - little, i used curry leaves powder.
  • Salt
  • Oil for frying
Method:
  • Clean all mushrooms and remove the stem.
  • In a large bowl, add onion pieces, gram flour, hing, chilli powder, ginger, garlic, coriander leaves, curry leaves powder, garam masala, and salt. Mix it nicely. Add water little-by little, the consistency should be thick, i added 1/2 cup of water.
  • Heat oil in a wide pan, coat mushroom with the gram flour batter and fry it golden brown.
  • Serve it hot.
Note:
We are not stirring in mushroom in the onion-gram flour batter cause mushrooms break easily.

Eggless Nuts Cookies

Ingredients:
  • All purpose flour/ Maida - 1 cup
  • Butter - 80 gm (room temperature)
  • Natural cane sugar/nattu sakkarai - 1/2 cup or 80 gm
  • (if you don't have this sugar, try brown sugar or refined sugar)
  • Vanilla essence - 1 tsp
  • Salt - pinch
  • Mixed nuts(cashew, almond, walnut) - 1/2 cup
Method:
  • Preheat oven to 200 degrees.
  • Cream sugar and butter with electric mixer,beat in vanilla and salt.
  • Reduce the speed of mixer and gradually add flour, blend it nicely.
  • Finally fold in nuts.
  • Roll the balls from the dough and flatten it. Place it in the baking plate, one inches apart.
  • Bake cookies until it turn light brown, it took 20 minutes in my oven. 
  • Transfer it to the rack, cool it and store it.
  • These cookies are very crisp and tasty.

Pakoda Kadhi

Ingredients:
For making pakodas
  • Besan/Gram flour - 1 cup
  • Onion - 1 (big)
  • Green chilli - 2
  • Salt - as required
  • Chilli powder - 1/4 tsp
  • Hing - little
  • Water - 1/4 cup or as required
For kadhi
  • Besan/ Gram flour - 2 tbsp 
  • Curd - 1.5 cup
  • Coriander powder - 1 tsp
  • Turmeric powder - 1tsp
  • Chilli powder - 1 tsp
  • Garam masala - 1/2 tsp
  • Salt - as required
  • Onion - 1
  • Cumin seeds - 1 tsp
  • Fenugreek seeds - 1/2 tsp
  • Chilli - 2
  • Chopped ginger - 1 tsp
  • Curry leaves - little
  • Coriander leaves to garnish
Method:
Pakoda:
  • Mix all ingredients given under pakodas except water. Start adding water little-by-little to get the right consistency. The pakoda batter should not be thick as well as watery. 
  • Heat oil in a wide pan, drop small balls of batter and fry it golden brown.
  • Keep this aside.
Kadhi
  • In a pan, mix besan, curd, chilli powder, coriander powder, salt, garam masala and turmeric powder. 


  • Beat it nicely, keep this aside.
  • Heat 1 tsp oil in a pan, add fenugreek seeds, cumin seeds, slit green chillies, chopped onion, ginger and curry leaves (i used powdered curry leaves).

  • Saute this for a minute, then add the curd-besan mix and 1/2 cup water, let it boil for 4 to 5 minutes. When it start thickening, add pakodas and boil kadhi for a minute. Finally garnish with coriander leaves.
  • Leave this pakoda kadhi for 10 minutes before serving for nice taste.
  • Kadhi taste wonderful with rice.

Beetroot Rava Kesari

Ingredients:
  • Beetroot (medium size) - 1
  • Rava/sooji - 1/2 cup
  • Sugar -10 tsp
  • Cardamon powder - little
  • Cashew - 15
  • Ghee - 1 tbsp
Method:
  • Grate beetroot and beat it in the juicer with 3/4 cup of water, strain the juice and keep it aside.
  • Heat ghee in a pan, when it is hot, roast cashews light brown. Keep cashews aside. 
  • In the same pan, slightly roast rava until nice aroma comes out, add 1/4 cup of water and sugar, after a minute add strained juice, stir it continuously. When it start thickening add cardamon powder and  cashews.
  • Beetroot kesari is ready. Serve it hot or cold.

Biscuit Cake - No Bake

This is a no-bake easy-to-do biscuit cake. My kids love this cake.
Ingredients:
  • Marie biscuits - 200 gm
  • Butter - 100 gm
  • Sugar - 2 tbsp
  • Hershey syrup - 45 ml
  • Egg - 1
Method:
  • Grease a cake pan with melted butter. Take biscuits in a plastic cover and pound it with a rolling pin, break it into small pieces. Take the biscuit pieces in a large pan.


  • Heat a pan, add butter, sugar and half of Hershey syrup, continue stirring until butter melts and sugar dissolves, this takes around 5 minutes.

  • Cream egg and other half of Hershey syrup with electric beater, add the butter mixture to the egg mixture and beat it for a minute until everything blends well and form a thick syrup.

  • Pour this syrup over the broken biscuits, mix it nicely so that the syrup coats all the pieces, pour this coated-biscuit in the greased cake pan. Use a spatula and press biscuits nicely so that it is tightly packed. 



  • Refrigerate the biscuit cake for 2 hours, cut and serve. 

Note:
If you don't have Hershey syrup, use cocoa powder of about 35 gm.

Cheese Crackers

This is an easy four ingredient snack for kids.
Ingredients:
  • Cheddar cheese - 200 gm
  • Unsalted butter - 1/2 cup
  • All purpose flour - 220 gm
  • Salt - 1/4 tsp
Method:
  • Preheat oven to 350°c, cream butter and cheese in a electric mixer.
  • Mix flour and salt, add little by little flour mixture to butter and cheese, continue beating until the dough becomes soft and pliable.
  • Wrap this dough in plastic sheet and refrigerate it for an hour.
  • Flatten the refrigerated dough, cut it with pizza cutter into small pieces, use fork and make small holes in each cut piece.

  • In a cookie sheet ( i used aluminium foil) line all the pieces and bake it for 10 minutes.
  • Store this in an airtight container. (If any crackers left :) )
  • In addition to the above ingredients, you can add any spices of your choice like chilli flakes.

Note:

Murungaikai Vadai / Drumstick vada (patti)

Ingredients:
  • Drumstick - 2
  • Channa dal - 1/2 cup
  • Moong dal - 1/2 cup
  • Chopped coriander leaves - 1/4 cup
  • Green chilli - 3
  • Onion - 1
  • Garlic pod - 2 (optional)
  • Grated ginger - 1/2 tsp
  • Salt as required
  • Oil for frying
Method:
  • Soak Channa dal and moong dal together for 4 to 5 hours, grind it coarsely, add finely chopped onion, finely chopped green chilli, chopped garlic, ginger, coriander leaves, and salt. Mix everything nicely.
  • Don't add water while grinding dals, if you feel the mixture is little watery, refrigerate it for an hour to make it thick.
  • Steam drumstick in a idli pan or steamer, remove the flesh(along with the seed), add drumstick flesh to the dal mixture. Vada batter is ready.
  • Heat oil in a pan, reduce it to medium, make small patti from the vada batter, drop it in oil and fry it golden brown. Serve hot.

Fish Fingers

Ingredient:
  • Fish with thick flesh - 250 gm
  • Ginger-garlic paste- 1/2 tsp
  • Chilli powder - 1/2 tsp
  • Soya sauce - 1/2 tsp
  • Tomato sauce - 1/2 tsp
  • Chilli sauce - 1/2 tsp
  • Pepper powder - 1/2 tsp
  • Salt as required ( add carefully, soy sauce also contains salt)
  • Oil for frying
  • Bread slices - 6
  • Egg - 1 (nicely beaten)
Method:
  • I bought king fish and got it sliced into strips from the shop itself. If you have bought whole fish slices then chop it into thin strips. Clean the fish strips nicely.
  • Marinate the fish strips with ginger-garlic paste, tomato sauce, soya sauce, chilli sauce, chilli powder, pepper powder, and salt. Keep this in refrigerator for an hour.

  • Remove the edges of the bread slices, crumble and grind it in the mixer, the breadcrumbs should be coarse.

  • Heat oil in a pan, when it is hot, reduce the flame to low. Coat each strips in the breadcrumbs and fry it golden brown.

Rogan Josh - Kashmiri Mutton Recipe

Rogan josh gravy is very thin with unbeatable taste. There are several version, i tried the simpler one.
Ingredients:
  • Lamb meat - 500 gm
  • Yogurt/Curd - 1/4 cup
  • Asafoetida/hing - pinch
  • Bay leaf - 1
  • Cinnamon  - 1
  • Cloves - 2
  • Cardamom (black and green) - 2 each
  • Kashmiri chilli powder - 1 tsp
  • Coriander powder - 1tsp
  • Cumin powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Garam masala - 1 tsp
  • Ginger-garlic paste - 1 tbsp
  • Onion - 1
  • Ghee - 2 tbsp
  • Coriander leaves for garnish
  • Salt to taste
Method:
  • Heat oil in a thick bottom pan, Add asafoetida, cinnamon, cardamom, bay leaf, and cloves, saute for few seconds. Then add lamb pieces, saute till the water from the meat is gone and it turns slightly brown. Keep this fried pieces aside.

Fried mutton
  • In the same pan, add chopped onion, fry till it turns transparent, add ginger-garlic paste and saute till raw smell disappear. Finally add turmeric powder, chilli powder, coriander powder, cumin powder, and salt. Saute everything nicely, take care not to burn.

Masala
  • Now stir fried meat and 1 tsp of yogurt in the pan, blend it nicely, stir continuously. Slowly, add yogurt little-by-little and blend it well.

  • Add 2 cups of water and cook it in low flame. It took 30 minutes for mutton to cook. Sprinkle garam masala and give a final stir.

  • Garnish with corainder leaves and serve hot with rice, dosa, idli and so on.

Lapsi - Gujarati Sweet

Lapsi is somewhat similar to rava kesari in making. Taste is wonderful and it contains goodness of broken wheat.


Ingredients:
  • Broken wheat/ dhalia - 1/2 cup
  • Sugar  1/2 cup
  • Water - 2 cups
  • Cardamom powder - pinch (i used whole cardamom)
  • Raisin - 10
  • Cashew - 10
  • Chopped almond - little for garnishing
  • Ghee - 2 tbsp
Method:
  • Add a tsp of ghee in a pan and slightly roast raisin and cashew, keep this aside.
  • Heat ghee in the same pan, slightly roast broken wheat for 3 to 4 minutes. 
  • Add water and let wheat cook nicely. This takes about 15 minutes, then add cardamom, sugar, raisin and cashew, cook in low flame for 5 minutes till the ghee separates.
  • Garnish it with almonds and serve hot or cold. 
  • If the lapsi becomes thick, add little milk and reheat for a minute before serving.

Rose Milk with Homemade Rose Syrup(with rose petals) - Summer special

Ingredients:
For Rose syrup:
  • Rose petals - 1 cup
  • Sugar - 2 cups
  • Water - 2 cups
  • Cloves - 1
  • Lemon juice - 1 tsp
For Rose milk (for one glass)
  • Boiled Milk - 3/4 tumbler
  • Rose syrup - 2 tsp
  • Rose water - 2 drops
  • Ice cubes
Method:

  • Wash rose petals and let it dry for 20 minutes. In a pan, take rose petals and mix with one tsp sugar, mix it well, refrigerate overnight.

  • Now add water, cloves, and sugar, let it boil on medium flame till it becomes thick. Add lemon juice when the syrup starts thickening. Syrup gets nice color from petals.
  • Filter the syrup and store it in the sterilized, clean jar. 
  • This syrup can be used in milkshakes, ice creams and so on.
Rose milk:
  • In a glass, add rose syrup, rose water, and milk. Mix it well.
  • Add ice cubes and serve cold.
  • This is the wonderful, easy summer drink.

Dragon Chicken - Kids special

Ingredients:
  • Boneless Chicken strips - 500 gm
  • Oil for frying
Marination
  • Soya sauce - 1 tsp
  • Chilli powder or Red chilli paste - 1 1/2 tsp
  • Ginger-garlic paste - 1 tbsp
  • Egg -1
  • Corn flour - 2 tsp
  • All purpose flour - 1/4 cup
  • Salt to taste
  • Pepper - 1tsp
Gravy:
  • Onion -1
  • Capsicum - 1
  • Ginger-garlic paste - 1 tbsp
  • Cashews - 10
  • Chilli powder - 1 tsp
  • Soya sauce - 1 tsp
  • Tomato ketchup - 1 tbsp
  • Sugar - 1 tsp
  • Salt to taste
  • Red chillies - 3
  • Oil - 2 tsp
Method:
  • Clean and marinate chicken with the ingredients under marination. Keep this aside for half an hour. 
  • Fry marinated chicken in hot oil over medium flame. Keep this aside.

Chicken fried in hot oil
  •  Heat oil in a pan, add red chillies and cashews. when the cashews turn light brown, add onion, capsicum and ginger-garlic paste. Saute this for a minute.
  • Add in red chilli powder, soya sauce, ketchup. sugar and salt. Let the gravy thickens.

Gravy is ready

  • Finally toss the fried chicken pieces and let it coat well with the gravy.
  • Finally, add chopped spring onion or coriander leaves.
  • Serve hot.

Channa dal

Steamed VadaCurry

Ingredients:
  • Channa dal - 1 cup
  • Red chillies - 3
  • Fennel seeds - 1 tsp
  • Garlic pods - 3  (optional)
  • Onion - 1 
  • Tomato - 1
  • Ginger-garlic paste - 1 tsp
  • Chilli powder - 1 tsp
  • Corainder powder - 1/2 tsp
  • Turmeric powder - 1/2 tsp
  • Salt as required
  • Cinnamon -1
  • Cardamon - 1
  • Bay leaf - 1
Method:
  • Soak channa dal for 3 to 4 hours. I soaked it overnight. Grind red chilies, garlic pods, fennel seeds followed by soaked channa dal,ground it rough. Add little salt to this mixture. 
  • Make small balls from channa dough, flatten it and steam it in idli maker or steamer for 10 minutes.
  • Heat oil in a pan, add cardamon, cinnamon, bay leaf, chopped onion, saute this for a minute and add ginger-garlic paste, saute till raw smell disappears, now add tomato.
  • When tomato softens, add chilli powder, coriander powder, turmeric powder, salt, add 1.5 cups of water. Meanwhile smash steamed channa patti. When the water start boiling, add smashed channa and cook it for about 5 minutes more till everything blend well. 
  • Vada curry should not be thick, should be like gravy consistency, serve this hot with idli or dosa.

Podi Idli - Kids Special

Ingredients:
  • Idli - 4
  • Idli podi - 1 to 2 tsp 
  • Grated carrot - 1/2 cup
  • Urad dal - 1 tsp
  • Mustard seeds - 1 tsp
  • Curry leaves - little
  • Oil - 1 tsp
Method:
  • Cut idlis into small pieces. In a pan, add oil, mustard seeds, curry leaves, urad dal and saute it in low flame.
  • Then add idli pieces, idli podi, carrot and toss it nicely until idli is coated with the podi. 
  • Serve hot.
  • I made less spicy and without much decoration, you can add-in peanuts, coriander leaves and so on. My kids like it plain.

Baked Omelette - kids special

Ingredients:
  • Egg -6
  • Pepper powder - 1/2 tsp
  • Salt as required
  • Onion - 1 
  • Tomato - 1
  • Grated cheese - 1/4 cup
  • Oil - 1 tsp
Method:
  • Chop onion and tomato finely. Whisk all six eggs in a large cup with pepper and salt.
  • Apply oil in each cup of the muffin pan and add little onion, tomato, cheese in each cup. Now pour whisked egg mixture to each cup in the pan such that the mixture covers 3/4 of the cup (because after baking the omelette rises and if the cup is full, the omelette becomes messy).
  • Bake this 10 minutes high. Baking timing may vary according to each oven, you can remove the omelette once it rises very well.
  • Serve hot, this is the best breakfast for kids.

Thavala Vada

Ingredients:
  • Raw rice - 1/2 cup
  • Toor dal - 1/4 cup
  • Channa dal - 1/4 cup
  • Urad dal - 1/4 cup
  • Moong dal - 1/4 cup
  • Sago - 1/4 cup
  • Red chillies - 6
  • Chopped corainder leaves - few
  • Chopped onion - 1/4 cup
  • Grated coconut - 1/4 cup
  • Hing - little
  • Salt as required
  • Oil for frying
Method:
  • Soak rice and other dals for 4 hours. Grind red chillies first, followed by rice and dals.
  • Take the ground items in a wide bowl, add sago, coriander leaves, onion, coconut, salt, and hing.
  • Mix everything nicely. Heat oil in a pan, when it starts boiling, reduce it to medium.
  • Take little vada batter, flatten it in your palm, fry it golden brown in oil.
  • Serve hot with any chutney.
