Cheese Paratha

Ingredients:
  • Wheat flour - 1 cup
  • Grated Cheese - 1/2 cup
  • Pepper - pinch
  • Salt as required
  • Water for kneading dough
  • Oil or butter - 2 tbsp
Method:
  • Knead flour, salt and water into soft dough. Make small balls(golf ball size).
  • Now mix cheese and pepper together. This is our filling.
  • Press the wheat balls into small circle, keep the filling, close the balls nicely.
  • Roll the balls, take care while rolling as the filling may come out.
  • In a hot tawa, cook one side of paratha, flip the roti and apply oil, again flip and apply oil. Take extra care while flipping as the filling may come out.
  • Serve this paratha with gravy of your choice.

Cheese Noodles

Ingredients:
  • Plain egg noodles - 1 small pack
  • Grated cheese - 1/3 cup
  • Butter - 1 tsp
  • Olive oil - 1 tsp
  • Salt as required
  • Pepper - a pinch
Method:
  • In boiling water, add noodles, cook it for 3 to 4 minutes(take care not to overcook).
  • Drain water and run cold water over noodles and add one tsp of olive oil (this prevents noodles from becoming sticky).
  • In a pan, add butter and grated cheese, now add noodles, salt, and pepper. Toss noodles nicely with cheese and butter.
  • Serve hot.

  • Idli batter - 1 cup
  • Grated cheese - 1/2 cup 
Method:
  • In idli maker, pour one small ladle of idli batter and added grated cheese, then cover it with one more ladle of batter.
  • Steam it and serve with chutney of your choice.

Triangle Paratha

Ingredients:
  • Wheat flour - 1 cup
  • Salt as required
  • Oil - 1 tbsp
  • Water for making dough
Method:
  • In a bowl, add flour, salt, and water. Mix and knead it into smooth dough.
  • Make golf ball sized balls from the dough.

  • Roll the ball into circle, apply oil on the circle and fold it into half. Again apply oil and fold it into triangle. Now roll the triangle without changing its shape.
  • Now cook paratha on hot tawa. Cook paratha on both sides, no oil is required.
  • Serve this paratha with onion raita or just plain curd.

Rava Kesari

Ingredients:
  • Rava/Sooji - 1/2 cup
  • Sugar - 1 cup
  • Ghee - 1/4 cup
  • Water - 1 1/2 cup
  • Kesari color - pinch
  • Cashew - 7
  • Raisin - 7
Method:
  • Heat ghee in kadai and roast rava in it until nice aroma comes out. Rava turns light brown.
  • Roast raisin and cashew in ghee and keep this aside.
  • Boil water in kadai and add roasted  rava, keep stirring to avoid lumps.
  • When the rava is cooked nicely add sugar and kesari color, now cook in medium flame.
  • When the kesari became whole mass, add roasted cashews and raisins, mix everything nicely.
  • Your kesari is ready to serve.

Paneer Bread Balls

Ingredients:
  • Paneer - 200gms
  • Bread - 4
  • Potato - 1
  • Onion - 1
  • Turmeric powder - 1/2 tsp
  • Green chilli - 1 or 2
  • Coriander leaves - few
  • Salt as required
  • Oil for frying
Method:
  • Scramble paneer nicely. Soak bread in water, drain water and mash bread nicely. Boil potato, peel off skin and mash it nicely.
  • In a bowl, add scrambled paneer, mashed bread, mashed potato, chopped onion, turmeric powder, chopped green chilli, chopped coriander leaves, and salt. Mix it nicely. Make small balls from the dough.
  • Heat oil in a kadai and fry the paneer balls.

Paneer Fry

Ingredients:
  • Paneer - 250gms
  • Tomato - 1
  • Onion - 1
  • Chopped garlic - 1 tsp
  • Chilli powder - 1 tbsp
  • Coriander powder - 1 tbsp
  • Turmeric powder - pinch
  • Salt as required
  • Ghee or butter - 2 tbsp
Method:
  • Cube paneer and saute it in 1 tbsp ghee. 
  • Chop tomato and onion, heat remaining ghee in a pan and add chopped onion and tomato, saute this for few minutes.
  • Add garlic, coriander powder, turmeric powder, chilli powder, and salt. Saute it nicely, add little water, when ghee separates from the masala, add paneer cubes.
  • Mix paneer cubes nicely with the masala.
  • Your paneer fry is ready to serve with pulao, rotis or naan.

Ingredients:
  • Tulasi leaves - 10
  • Karpuravalli/Country borage - 10
  • Black pepper-1 tbsp
  • Cumin seeds- 1 tbsp
  • Coriander seeds - 1 tbsp
  • Cardamon - 3
  • Dry ginger - little
  • Panakarkandu/Rock candy - 10

Method:
  • Except tulasi, karpuravlli, and rock candy, grind everything into fine powder. Store this powder in an airtight container.
  • Boil water and add two teaspoons of this powder, tulasi leaves, rock candy, and karpuravalli. Boil this for 15 minutes in medium flame.
  • Let it cool and filter the kashyam water. This drink is best for cold and cough.

Bread Aval Vadai

Ingredients:
  • Bread - 5 slices
  • Poha/Aval - 1 cup
  • Onion -1
  • Ginger - small piece
  • Green chillies - 2 or 3
  • Coriander leaves - few
  • Salt as required
  • Oil for frying
Method:
  • Soak poha in water for 5 minutes. Drain water and add poha in a mixing bowl.
  • Soak bread in water for 1 minute. Drain water and add this to the mixing bowl.
  • Mix poha and bread nicely, and add chopped onion, green chillies, ginger, coriander leaves, and salt.
  • Mix all the ingredients nicely, no need to add water.
  • Make small balls from the dough, flattened it in your hand and fry it in the hot oil just like other vadas.
  • Your vada is ready to serve.

Moong Dal Ladoo

Ingredients:
  • Moong dal - 1 cup
  • Sugar - 3/4 cup
  • Ghee or butter - 1/2 cup
  • Cardamon powder - 1/2 tsp
Method:
  • Dry roast moong dal nicely until it becomes reddish brown, let it cool down and powder it. Sieve moong dal powder in a bowl.
  • Powder sugar and add it to moong dal powder, and add cardamon powder. Mix it well
  • Add melted ghee to this above mixture gradually and make ladoos when it is still warm.
  • Store this ladoo in a airtight container.

Karevepillai Kulambu/Curry leaves kulambu

Ingredients:
  • Curry leaves - 1 cup
  • Pepper - 1/2 tsp
  • Cumin seeds - 1 tsp
  • Red chillies - 2
  • Fennel seeds - 1/2 tsp
  • Garlic pods - 2 (optional)
  • Sambar powder/chilli powder  - 1 tbsp
  • Coriander powder - 1 tsp
  • Turmeric powder - 1 tsp
  • Tamarind - lemon size
  • Salt as required
  • Mustard seeds - 1 tsp
Method:
  • Extract juice from tamarind, keep this aside.  In a pan, dry roast curry leaves, cumin seeds, pepper, red chillies, fennel seeds, and garlic. Grind the dry roasted ingredients, add little water while grinding.
  • Heat oil in a pan and add mustard seeds, when it start spluttering add curry leaves, and then pour tamarind juice.
  • Now add the ground paste, sambar powder, coriander powder, turmeric powder, and salt. Let it boil for 10 minutes until the kulambu becomes half of its original quantity.
  • Serve this kulambu with rice and sutta appalam or curry.

  • Cucumber - 1
  • Carrot -2
  • Milk - 1 cup

  • Extract juice from cucumber and carrot.
  • In a blender, add cucumber juice, carrot juice, milk, sugar, and ice cubes, blend it nicely.
  • Serve this with any snacks.

Fried Banana

This is a simple recipe, can be done in 2 to 3 minutes.


Ingredients:
  • Banana - 5(small bananas)
  • Ghee or butter - 2 tbsp
  • Powdered sugar - 2 tbsp
Method:
  • Peel the skin from banana. 
  • Heat ghee in a pan and add banana, fry this 2 or 3 minutes.
  • Immediately dust sugar on the bananas, serve hot.
Note: If you trying this recipe with big bananas, then chop it into half.

Ingredients:
  • Idli batter - 2 cups
  • Potato - 1
  • Carrot - 1
  • Beans - 10
  • Onion - 1
  • Chilli powder - 1 tbsp
  • Salt as required
Method:
  • Boil potatoes, peel the skin and chop it.
  • Heat oil in a pan, add chopped onion, saute until it becomes transparent. Now add chopped vegetables, chilli powder, and salt. Add little water and cook this gravy. This is our idli stuffing.
  • In steamer or idli maker, add one tbsp of batter, then add one tbsp of stuffing and finally cover the stuffing with one tbsp of batter.
  • Steam it and serve this idli with chutney of your choice.

Ingredients:
  • Chopped broccoli - 1cup
  • Urad dal - 1 tsp
  • Channa daal - 1 tsp

  • Mustard seeds - 1 tsp

Method:
  • Heat oil in a pan, add mustard seeds, when it stars spluttering, add curry leaves, channa dal, red chillies, and urad dal, saute it for 1 minute.
  • Now add chopped broccoli and salt, cook this in medium flame, no need to add water. 
  • Your broccoli poriyal is ready to serve in 10 minutes.

Ingredients:
  • Button mushroom - 1 packet
  • Onion - 1
  • Tomato - 1
  • Ginger-garlic paste - 1 tbsp
  • Bay leaf - 1
  • Star anise - 1
  • Cardamon - 1
  • Cinnamon stick - 1
  • Thick coconut milk - 1 cup
  • Basmati rice - 1 cup
  • Chilli powder/Sambar powder - 1 tsp
  • Salt as required
  • Ghee - 2 tbsp
Method:
  • Soak the rice for 10 minutes in water. Wash mushroom nicely and cut it into big pieces.
  • Chop onion(lengthwise) and tomato, keep this aside.
  • Heat ghee in a cooker and add cardamon, cinnamon, star anise, and bay leaf.
  • Then add chopped onion, saute until it becomes transparent. Now add ginger-garlic paste, saute until raw smell disappears.
  • Then add tomatoes, saute this for 1 or 2 minutes. Now add mushroom and coconut milk, let it cook for 3 or 4 minutes.
  • Finally add rice and close cooker with lid, put the whistle on. Switch off the stove after 2 whistles.
  • Serve this mushroom pulao with raita of your choice.

Pepper Kulambu/ Milagu Kulambu

Ingredients:
  • Black pepper - 1 tbsp
  • Channa dal - 1 tbsp
  • Urad dal - 1 tbsp
  • Coriander seeds - 1 tbsp
  • Tamarind - lemon size 
  • Dry red chilli - 2
  • Curry leaves - few
  • Asafoetida - pinch
  • Mustard seeds - 1 tsp
  • Salt as required
Method:
  • Soak tamarind in one cup of water for 10 minutes and extract tamarind juice.
  • Dry roast black pepper, urad dal, channa dal, coriander seeds, red chilli, few curry leaves, and asafoetida.
  • Allow the roasted ingredients to cool and grind it into fine powder, add this powder to the tamarind juice, mix it well, then add required salt. Make note that i have not heated anything till now.
  • Now boil the tamarind juice, when it reduces to half, switch off the kulambu. In a separate pan, heat oil and mustard seeds and curry leaves, add this seasoning to kulambu.
  • Serve this kulambu with rice and appalam. This kulambu is very good for health.

Rasagulla

Ingredients:
  • Milk - 1 litre
  • Sugar - 1 cup
  • Water - 3 cups
  • 2 tbsp - lemon juice
Method:
  • Boil milk, once it starts boiling add lemon juice, milk whey gets separated. Immediately add 5 ice cubes to it and keep it aside for 5 minutes.
  • Strain the curdled milk and pour it in light cotton cloth. Wash this in a cold running water, squeeze extra water, and hang it aside for 30 minutes.
  • After 1/2 an hour, remove paneer in a plate and knead it to a pliable dough. Make small balls from the dough(without any cracks on the ball), i made 15 balls.
  • Prepare sugar syrup in a thick bottomed pan(i used pressure cooker).Once the sugar syrup starts boiling, add paneer balls, close the cooker, don't add whistle, cook this in medium flame for 10 minutes. Now the rasagulla balls will be double the size.
  • Now your rasagullas are ready. Serve it chilled.

Ingredients:

  • Rice flour - 1 cup
  • Urad dal - 2 tbsp
  • White sesame seeds - 1 tsp
  • Powdered jaggery -1 cup
  • Grated coconut - 2 tbsp
  • Cardamom powder - 1/4 tsp
  • Oil for frying
Method:
  • Dry roast urad dal and grind it nicely into powder.
  • Boil jaggery with 1/4 cup water and switch off the stove once the jaggery completely melts.
  • Sieve the rice flour and urad dal flour together, add this to a bowl, then mix white sesame seeds, grated coconut, and cardamom powder.
  • Now filter the jaggery water and add this to all other ingredients.
  • Knead all the ingredients into soft dough. Make small balls lightly bigger than the uppu seedai.
  • Fry these seedai balls in oil and store this in airtight container.

  • Dry roast coconut and sesame seeds, keep this aside.
  • Sieve rice flour and urad dal flour together.
  • In a bowl, add sieved flour, coconut, butter, sesame seeds, and salt. Mix it nicely. Add water little-by-little to form soft dough.
  • Roll small balls and keep it aside for 1/2 hour.
  • Heat oil in medium flame, fry seedai balls until it turns golden brown.
  • Store seedai in airtight container.

Aval Payasam

Ingredients:
  • Aval - 1 cup 
  • Milk - 2 cups
  • Powdered jaggery - 1/4 cup
  • Elachi powder - pinch
  • Grated coconut  - 1/4 cup
  • Broken cashew - 1 tbsp
  • Ghee - 1 tbsp
Method:
  • Soak aval in water for 5 minutes. Drain water and keep aval aside.
  • In a pan, add ghee and roast cashews, keep this aside. Again in the same ghee roast coconut.
  • Heat milk in a pan until it becomes thick, now add jaggery and elachi powder to it.
  • When jaggery is mixed well, add cashews and coconut, and finally aval, heat this for 5 mins.
  • Serve this hot or cold. Add little milk while serving as the aval payasam thickens quickly.

Oma podi

Ingredients:
  • Gram flour (besan) - 1 cup
  • Rice flour - 1/4 cup
  • Hot oil - 2 tbsp
  • Carom seeds (omam) - 1/2 tbsp
  • Salt as required
  • Oil for frying
  • Method:
  • In a blender, add 1/4 cup water, carom seeds and salt, grind it into a smooth paste(watery consistency).
  • In a bowl, add gram flour, rice flour, and hot oil. Strain the ground paste and this carom water to the other ingredients.
  • Knead the above ingredients into pliable dough, add water little by little while kneading.
  • Take the oma podi maker(this one has tiny holes) and add small ball of dough to it.
  • Heat oil for frying(medium flame), press the oma podi maker in a circular motion.
  • Fry until the oma podi becomes yellowish red, dry this in the tissue paper.
  • This can be stored in airtight container for days.
