Mushroom Pulao

I am going to send this recipe to Manjula's August contest.

Ingredients:
  • Button mushroom - 1 packet
  • Onion - 1
  • Tomato - 1
  • Ginger-garlic paste - 1 tbsp
  • Bay leaf - 1
  • Star anise - 1
  • Cardamon - 1
  • Cinnamon stick - 1
  • Thick coconut milk - 1 cup
  • Basmati rice - 1 cup
  • Chilli powder/Sambar powder - 1 tsp
  • Salt as required
  • Ghee - 2 tbsp
Method:
  • Soak the rice for 10 minutes in water. Wash mushroom nicely and cut it into big pieces.
  • Chop onion(lengthwise) and tomato, keep this aside.
  • Heat ghee in a cooker and add cardamon, cinnamon, star anise, and bay leaf.
  • Then add chopped onion, saute until it becomes transparent. Now add ginger-garlic paste, saute until raw smell disappears.
  • Then add tomatoes, saute this for 1 or 2 minutes. Now add mushroom and coconut milk, let it cook for 3 or 4 minutes.
  • Finally add rice and close cooker with lid, put the whistle on. Switch off the stove after 2 whistles.
  • Serve this mushroom pulao with raita of your choice.

  1. is that 1 cup coconut milk itself enough for the amount of rice mentioned in the recipe to cook?? or should i add water..
    and pls tell me the quantity of water required to cook in a kadai instead of cooker.

    1. Harry, 1 cup coconut milk is enough, if you want you can add additional 1/2 cup coconut milk or water. Just add enough coconut milk to cover rice because too much of coconut milk will spoil the recipe.

      In kadai version, for 1 cup rice, add 1.5 cups of water.
